Watkins has low-carb answers

There have been many diets and weight loss plans that have come and gone through the years, including the Atkins diet. Atkins, as well as other low-carbohydrate, high-protein diets, were popular decades ago, and are making a comeback.

While these diets do promote weight loss, in order to keep the weight off, the diet must be followed for a lifetime, and that’s what worries health experts. Any extreme type of eating plan that is followed for just a short time will not likely have long-term health risks, but a lifetime plan of virtually cutting out an entire food group that is essential for health, without knowing the long-term risks, is a concern. While the long-term health risks of low-carbohydrate plans have not yet been determined, doctors caution against the increased risk of gout, kidney stones, kidney and liver disease, weakened bones, and mood swings. Depression is a concern because carbohydrates help boost the production of serotonin, which controls emotions, and a shortage of serotonin can lead to mood swings and depression.

As a registered dietitian and licensed nutritionist, I encourage a sensible eating plan that includes all food groups in moderation—lean meats, fish, seafood and poultry, whole grains, fruit, vegetables, dairy, and an occasional sweet. However, I realize that many people are looking for products that can be used with the Atkins plan or other low-carbohydrate eating plans. Petro Carbo to the RESCUE!

Ever since I was a child I have had bad reactions to bug bites. The other day I had a black fly bite on my inner right wrist. It was just at the place on my wrist that every time I moved my wrist it would irritate the bug bite. Since I am right handed it, it was getting so irritated and sore. My whole wrist started to swell and it was painful to move it. I was out for most of the day and didn't have access to the Petro Carbo Salve. So as soon as I got home and I applied it with in 10 or so minutes the redness, the itching and some of the swelling disappeared. It felt so much better. Lesson learned never live home with out the Petro Carbo!

Layered Salsa & Sour Cream Dip

It’s so DELICIOUS you won’t believe it’s so EASY to make!
Simply follow the directions on the Watkins Salsa & Sour
Cream Dip Mix making 1 1/2 cups. Spread evenly in shallow
bowl/plate. Top with grated cheese, chopped tomatoes,
ending with chopped green onions. Serve with nacho
chips & watch it quickly disappear!

I just made this again today! Oh my it is so good. This time I didn't have sour cream but I had cream cheese on hand and it was still very very good. If you make this with the cream cheese I recommend letting it set out a room temp for a little bit to let the cream cheese soften so it is easier to dip/scoop up. :D The fresh tomatoes, green onions and the Watkins Salsa & Sour Cream dip mix just are bursting with fantastic flavour! Mmm good...on the note I am going for a lil bit of it right now! ;)

1/2 cup Watkins Baking Cocoa
2-1/2 teaspoons Watkins Baking Powder
1-1/2 teaspoons baking soda
1 teaspoon Watkins Sea Salt
1 teaspoon Watkins Cinnamon
3/4 cup Vegetable Oil
2 cups sugar
3 eggs
2 teaspoons Watkins Vanilla
2 cups ground, or shredded zucchini
1 cup nuts chopped (optional)
1/2 cup milk

Combine dry ingredients. Beat sugar and oil until blended. Add eggs one at a time. Stir in vanilla and zucchini. Add dry ingredients alternately with milk. Add nuts. Pour into greased and floured bread pans. Bake at 350 degrees for 1 hour or until toothpick comes out clean. Cool in pans 15 minutes, then turn out onto wire racks. When cool sprinkle tops with powdered sugar. Makes 2 loaves.

Blueberry Cobbler


4 cups blueberries, fresh or frozen (thawed)
1/2 teaspoon Watkins Lemon Extract *
1 cup all-purpose flour
1/2 cup sugar
1 teaspoon Watkins Baking Powder
Dash salt
1 tablespoon Watkins Original Grapeseed Oil
1 teaspoon Watkins Vanilla
2 egg whites, slightly beaten
2 tablespoons sugar
1/4 teaspoon Watkins Cinnamon *

Preheat oven to 350 degrees. Spray a 1-1/2 quart baking dish with Watkins Cooking Spray. Add blueberries and lemon extract; toss lightly. Combine flour, 1/2 cup sugar, baking powder and salt. Mix well, then make a well in center. In measuring cup combine oil, vanilla and egg whites; mix well. Pour into flour mixture and stir just until moistened. Drop 8 dumplings of dough onto blueberries. Sprinkle with a mixture of remaining sugar and cinnamon. Bake 35 minutes or until bubbly and browned. Makes 8 servings.

Shrimp Quiches

1 (8-ounce) package refrigerated butterflake dinner rolls
4 ounces small cooked shrimp
1 egg
1/2 cup whipping cream or light cream
2 teaspoons Watkins Minced Green Onion
1 teaspoon Watkins All Purpose Seasoning
1/2 cup shredded Swiss Cheese

Separate rolls into twelve equal pieces. Cut each in half and press into bottom and sides of greased muffin cups. Divide shrimp evenly among pastry shells. Beat together egg, Watkins Minced Green Onion and All Purpose Seasoning until well blended. Put about two teaspoons of mixture in each pastry shell. Sprinkle Swiss cheese over tops. Bake uncovered in 375 degree oven for 20 minutes or until centers are set. Serve warm. Yield: Twenty-four quiches.

Salmon Cucumber Appetizers

1 (7-3/4-ounce) can salmon, drained, bones and skin removed, and flaked
1 (3-ounce) package cream cheese, softened
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon Watkins Dill weed
2 small cucumbers
Canned pimento

Blend together salmon, cream cheese, lemon juice, salt, dill weed, and dash of pepper. Slice cucumbers 1/4-inch thick. Place about 1 teaspoon salmon mixture on each cucumber slice. Garnish with small pieces of pimento. Cover; chill till ready to serve. Makes about 48.

Clam Puffs

1 (8-ounce) package cream cheese
1 (7-ounce) can minced clams
Few drops of Worcestershire sauce
2 drops freshly squeezed lemon juice
1 teaspoon Watkins Onion Granules *
1/2 teaspoon Watkins Garlic Granules *
1/4 teaspoon salt
Watkins Paprika
Bread rounds

Drain liquid from clams and reserve. Mix clams and softened cream cheese. Add Worcestershire sauce, lemon juice, Watkins Onion Salt and Watkins Garlic Salt. Add clam juice as needed to make good spreading consistency. Put on bread rounds and sprinkle with Watkins Paprika. Broil approximately 2-1/2 minutes until lightly browned. Yield: Approximately 25 appetizers.

French Onion Dip


Summer is the perfect time for our most famous dip; also try the exciting variations!

2 tablespoons Watkins Onion Soup Mix *
2 cups reduced-calorie sour cream

Mix ingredients together and refrigerate for 2 or more hours. Serve with chips, crackers or vegetables. Makes 2 cups.

Variations:

ONION DILL DIP:

To the French Onion Dip add:

1 tablespoon Watkins Parsley
1 teaspoon Watkins Dill
1/4 teaspoon Watkins Garlic Granules
Dash Watkins Cayenne Pepper


ONION HERB DIP:

To the French Onion Dip add:

1-1/2 teaspoons Watkins Garlic & Chives Seasoning
1/2 teaspoon Watkins Minced Green Onion
1/2 teaspoon Watkins Oregano
1/2 teaspoon Watkins Basil


Appetizer Spread

1 (8-ounce) package Cream Cheese
1/4 cup Sour Cream
3 tablespoons Mayonnaise
1-1/2 tablespoons Watkins Crab Snack & Dip Mix
1 tablespoon Watkins Onion Flakes
1/4 teaspoon Watkins Garlic Powder Granules
Dash Watkins Cayenne (Red) Pepper
6 ounces Crab Meat - if canned, rinse and drain; if frozen, thaw (or imitation, works very well)

1/2 Cup Shredded Cheddar Cheese
Watkins Paprika

In medium bowl, combine first 7 ingredients; mix well. Add crab meat. Place mixture in shallow serving dish, such as a decorative pie plate, and bake at 350 degrees for 10 minutes. Take out of oven and sprinkle with cheese and Paprika. Return to oven and bake until bubbly (about 15 minutes). Let stand 5 minutes. Serve hot with assorted crackers or toast points. Makes 10 servings.

Cheese Balls

CHEESE BALL 1

Mix any Snack and Dip Seasoning, according to the directions on the bottle with 8 ounces of cream cheese. Roll in chopped pecans, walnuts, or other nuts of your choice or roll in Omelet & Soufflé Seasoning.

OR

CHEESE BALL 2

1 package (8 ounces) cream cheese, softened
2 tablespoons Watkins Original Barbecue Sauce Concentrate
1 teaspoon Watkins Onion Flakes
1/2 teaspoon Watkins Garlic Granules
Watkins Parsley

Combine cream cheese, Barbecue Sauce Concentrate, Onion Flakes and Garlic Granules; mix well and shape into ball. Sprinkle with Parsley. Serve with crackers.

Broccoli Dip


1 package (10 ounces) frozen chopped broccoli, thawed
1 cup sour cream
1 cup mayonnaise
1/4 cup chopped green onion
3 tablespoons Watkins Garlic & Dill Snack & Dip Seasoning
1 tablespoon Watkins Parsley
1 jar (2 ounces) sliced pimento, drained
Round loaf of bread, unsliced

Squeeze excess moisture from broccoli. Finely chop if desired. In medium bowl, combine all ingredients; mix well. Refrigerate at least 2 hours. Hollow out center of bread. Spoon dip mixture into center. Garnish with pimento strips or radish roses. Serve with cubes of bread.

Aloha Fruit Dip


1 package (8 ounces) cream cheese, softened
1 jar (7 ounces) marshmallow cream
1 teaspoon Watkins Ginger
2 teaspoons Watkins Rum Extract
1/8 teaspoon Watkins Orange Extract (optional)
Dash Watkins Nutmeg

Combine all ingredients and beat until smooth. Place in serving bowl and sprinkle a small amount of nutmeg on top for garnish. Serve with assorted pieces of fresh fruit placed on cocktail picks.

Bacon & Cheese Swirls

4 ounces (half of 250 gr package) cream cheese 1 tsp milk
2 TBSP Watkins Bacon & Cheese Dip Mix 1 can (8 oz) refrigerated crescent rolls
1 tsp Watkins Onion Flakes

Combine cream cheese, Watkins Bacon & Cheese dip mix, onion flakes and milk. Mix well. Separate the dough from the crescent roll package into 4 rectangles and press the perforations together to seal. Spread the cream cheese mixture evenly on dough. Starting on the long side, roll up rectangles and pinch edges to seal.
Cut each roll into 8 pieces. Place cut side down on an ungreased baking sheet. Bake at 375º F for 12 minutes or until golden brown.

Spicy Nacho Cheese

1/2 c Watkins Cheese Soup Base
1/2 c milk
1 c water
1/4 c Watkins Tropical Salsa
1 tsp Watkins Salsa & Sour Cream Snack
& Dip Seasoning
1 tsp Watkins Calypso Hot Pepper Sauce
1 tsp Watkins Inferno Sauce

Mix all the ingredients together in a sauce
pan. Cook on Medium heat until mixture
comes to a boil, stirring continuously.

Good with Tortilla or Nacho Chips.

Salsa & Cream Cheese Roll-Ups

1 pkg (8oz) cream cheese
1/2 c chopped black olives
1 can (4 oz) diced green chiles
2 1/2 TBSP Watkins Salsa & Sour Cream Snack & Dip Mix
1/2 tsp Watkins Garlic Granules
1/4 tsp Watkins Onion & Garlic Pepper
Watkins Tropical Salsa or Inferno for dipping

Beat cream cheese until smooth. Add all other ingredients,
(except Tropical Salsa or Inferno) mix well and refrigerate for 30 minutes. Spread
cream cheese mixture evenly over 6 (10 inch) flour tortillas. Roll up tightly jellyroll
fashion. Wrap in plastic and refrigerate at least 3 hours. Slice into 1/2 inch pieces and
serve with Watkins Tropical Salsa or Inferno Sauce. *For variation you may use your
favorite Watkins Snack and Dip Mix.
